APPELLATION SAVIGNY-LÈS-BEAUNE PROTÉGÉE
Located to the north of Beaune, the Savigny-ls-Beaune white comes from the “Planchots” and “Pimentiers” terroirs
TERROIR
Among its assets, the white Savigny-Lès-Beaune faces south and is planted on a steep slope with poor soil, thereby allowing its vines to grow directly down to the parent rock.
WINEMAKING & MATURING
The grapes are hand-picked and then delicately crushed our membrane press. The must slowly ferments in oak vats, under the impetus of the indigenous yeast, naturelly present within the harvest.
In view of perfectly preserving the fragile balance between mineral and fruity characteristics, the white Savigny-Lès-Beaune is partially matured in a 12 HL wood vat and in a big 500-liter cask, in view of offering the benefits of oak, without deforming the characteristics associated with the Chardonnay grape variety.
After a 14-months ageing period, the different containers are blended in stainless steel vats and gravity-fed into bottles.
TASTING NOTES
Extremly frank with plenty of vivacity, the white Savigny-Lès-Beaune boasts tropical fruits and golden apple aromas, as well as a full and refined palate. It is best served chilled and in it youth (before the age of 5) on its own or with refined. Seafood dishes, baked fish or chicken casserole.
