2020: perfect weather conditions for a perfect vintage. A fast and homogeneous flowering and fruit set under a warm and not overly rainy climate, ensuring good fertilization and promoting uniform ripening. A gradual water stress establishing itself thanks to a hot and dry July, causing a slowdown and then the complete halt of vine growth, no later than during véraison (the onset of ripening). Complete maturation of the different grape varieties ensured by optimal leaf functioning until harvest, without any significant resumption of vegetative growth. Beautiful weather, moderately warm and lightly watered, during the harvest, allowing for the ideal ripeness of each plot.TERROIR
This appellation is common to all the vineyards on the right bank of Bordeaux. It includes six different appellations, among which are the Côtes de Castillon from which this wine comes. The wines produced in this appellation are generally full-bodied and generous, with a fine and supple tannic structure.IN THE VINEYARD
The vineyard is managed according to local traditions (Guyot pruning, high planting density), with the aim of allowing the vines to produce healthy grapes with exceptional aromatic potential.
WINEMAKING
We pay great attention to the winemaking process. Inspired by the preparation of tea, the grapes are macerated at the right temperature and for just the necessary time to extract the perfect balance of tannins and color. Like a fine tea, the wine must be colorful, aromatic, and structured.
The harvested grapes are brought to the cellar, where they are sorted by variety and terroir. This allows for the expression of each parcel. We obtain cuvées with different characteristics and several blending possibilities to produce the desired wine.
Traditional winemaking with mastery of adapted temperatures. Long macerations allow for the development of soft and smooth tannins. To obtain a wine for ageing, rich in tannins, this takes 3 to 4 weeks.
AGEING
70% of the blend is aged in French oak barrel to ensure an elegant and nice structure.

Merlot 98%, Cabernet franc 2%
15 % VOL.
Contains sulphites. Does not contain egg or egg products. Does not contain milk or milk-based products.

TASTING NOTES
Dark red color. The nose is all about elegance and finesse, with candied black fruits and spicy notes. The palate is powerful and very balanced (beautiful tension), with the same aromas as the nose. The texture is velvety, and the finish is long and indulgent.

FOOD PAIRINGS
This wine have hints of spice and smokiness, which can enhance the flavors of grilled or roasted meats commonly found in Asian cuisine, like roast goose, Bejining duck, Char Siu as well as Chinese Foie Gras. It also goes well with noodle soup, chicken, salmon or seafood like brasied fish or crabs. The perfect fit for a nice lunch or dinner with friends and family.
